Caffe Opera will host a fantastic
wine tasting dinner on May 24.
Robert Rex, the wine maker for
Deerfield Ranch Winery will be on
hand to discuss his award-winning
wines and guide guests to maximize
their culinary experience
with excellent pairings to accompany
the delicious cuisine of Caffe
Opera.
Come and enjoy fine food and
great wine in the comfortable
atmosphere of this lovely restaurant
owned and operated by Varo
Angeletti.
The gastronomic adventure
will begin with a first course of
Cordon Bleu smoked salmon with
Mascapone in a crepe dressed with
a passion fruit reduction. This will
be accompanied by 2004
Sauvignon Blanc.
Baby field greens with Belgian
endive, blue cheese, poached pears
and caramelized walnuts will follow
with a 2002 Chardonnay from
the Sonoma Valley.
A 2001 Sangiovese and the
2001 Super T Rex will enhance the
tris of pasta course that includes
ravioli in alfredo sauce, pennette
with pesto and spicy Neapolitain
gnoccni.
For an entrée, choose swordfish
with tropical fruits and tequila
or petit filet mignon grilled
with a peppercorn and port wine
reduction paired with 2002 pinot
noir and 2001 cabernet sauvignon.
Dessert is a choice of
crème brulee or tiramisu accompanied
by 2000 Gold Botrytis
Riesling.
This cost for this fabulous
event is $69.95 per person plus tax

Deerfield Ranch started with
18 acres of land planted with
cabernet sauvignon grapes. In
2000, Robert and his wife PJ
bought the adjacent 49 acres and
are now building a new winery,
having planted 20 acres of
grapes. They will not bottle any
wines that they feel don’t live up
to the Deerfield label’s reputation.
