Stuffed French Toast With Fresh Berry Topping

Mother’s Day is upon us. Time to spend some significant time honoring the first woman who loved us completely and unconditionally. (And I can attest to the fact that there were a number of times I wasn’t all that loveable.) Every year our family discusses options for the celebration of the event, and we usually decide that a special meal out is the way to go. We don’t enjoy the crowds on that particular day, though, so we usually gather the day before for a relaxing and leisurely meal.

The parties are always fun, but it is the next day that is the real deal. So, why is this just a one-day observance? Why can’t we have Mother’s Week or, at least, Mother’s Weekend? OK, maybe this sounds a bit self-serving, but there are lots and lots of moms out there and just as many ways to party. If the celebration spans a weekend, everyone can get into the act, especially the kids. Why not have them prepare a decadent breakfast for Mom?

I must confess that eating breakfast in bed doesn’t appeal to me. Unlike in the movies, I don’t wake up looking radiant, nor am I instantly ready to eat. I need a chance to get a little organized and, preferably, showered. There is also the issue of spillage, both hot and cold, and crumbs! And do you really want your family to sit on the bed watching you eat?

Why not enjoy a delicious family breakfast on the patio? This time of year dining al fresco is delightful, and crumbs and spillage are not big issues. My friends at Nestle have created a luscious recipe that will be sure to please mothers, dads and kids alike: Stuffed French Toast With Fresh Berry Topping.

Combining your favorite strawberry preserves with creamy ricotta cheese makes a delectable filling for the French toast “sandwiches.” Fresh berries and a dusting of powered sugar make for a festive and colorful presentation. Yummy.

This Mother’s Day, make something wonderful — like a reservation for dinner — but show your affection for Mom with a springtime breakfast, too. Stuffed French Toast With Fresh Berry Topping is an ideal and flavorful way to celebrate with Mom, your biggest fan.

Stuffed French Toast With Fresh Berry Topping

Preparation Time: 15 mins
Cooking Time: 12 mins
Servings: 6

Ingredients:

  • 2 cups mixed berries (strawberries, raspberries, blueberries and/or blackberries)

  • Vegetable oil, butter or margarine

  • Powdered sugar (optional)

  • Maple syrup, heated (optional)

  • 2 tablespoons granulated sugar

  • 2/3 cup low fat ricotta cheese

  • 1/4 cup strawberry preserves

  • 3 large eggs

  • 2/3 cup (5 fluid-ounce can) Carnation Evaporated Fat Free Milk

  • 2 tablespoons brown sugar

  • 2 teaspoons vanilla extract

  • 12 slices (about 3/4-inch-thick) French bread

Directions:

COMBINE berries and granulated sugar in small bowl. Combine ricotta cheese and preserves in separate small bowl; mix well. Combine eggs, evaporated milk, brown sugar and vanilla extract in pie plate or shallow bowl; mix well.

SPREAD ricotta-preserve mixture evenly over 6 bread slices. Top with remaining bread slices to form sandwiches.

HEAT small amount of oil in large, nonstick skillet or griddle over medium heat. Dip sandwiches in egg mixture, coating both sides. Cook on each side for about 2 minutes or until golden brown.

SPRINKLE with powdered sugar; top with berries. Serve with maple syrup.
